Popularization of a court dish

   Today, meat-garnished cold noodles in tray is very popular among our people together with Pyongyang cold noodle.

   However, few people know about the story of how this dish was reborn.

   One day in November Juche 88 (1999), during the period of arduous march and forced march, Chairman Kim Jong Il called an official and said that in the old days the royals had had noodle in flat vessel garnished with Obuksal which is tender flesh that could be obtained only a few kilos from a cow’s belly under the ribs. And he told that he was willing to let the people have such noodle and that it was his firm decision.

   Looking at the official who was surprised at his unexpected remark, the Chairman continued that provided it would be difficult to get Obuksal enough, we could garnish the noodle with chicken meat instead from the new chicken factories and various seasonings like sesame oil, then it would not be less than the beef noodle in terms of tastes and nutritive values. He named the chicken noodle Meat-garnished cold noodles in tray and made it to be served to people in the famous restaurants like Okryu Restaurant.

   Afterwards, the Chairman took measures to supply the chicken meat from the modern chicken factories needed in making at least 2 000 dishes a day and to provide pepper and finest seasonings.

   Furthermore, saying that as we decided to serve meat-garnished cold noodles in tray as good as the Obuksal noodle which had been a court food, we should let people use brass tableware rather than normal vessels, he took measures to provide complete sets of brass tableware needed in the Okryu Restaurant.

   Like this, thanks to the Chairman’s endless love measures for the people, the noodle was newly born as a folk food which is absolutely perfect in every way.

   From this moving story that a court food is served on the table of the people, we could know well about the everlasting love of the Chairman who would pluck even a star, if needed, for the good of the people.
