Rectification of kimchi production process

   In harmony with a cool, stimulative and scent of its own and refreshing flavour, kimchi has been one of the traditional food of our nation from olden times.

   In order to implement the behests of the great leaders who devoted themselves to the industrialization of the production of kimchi, which is indispensable in our people's diet, the respected Comrade Kim Jong Un personally initiated the construction of the modern Hwasong Kimchi Factory and led it to completion at the highest level.

   On June 9, Juche 105 (2016), the respected General Secretary, who visited the newly-built Hwasong Kimchi Factory, told officials that our national food, kimchi, is now widely known as the world's five health food and the demand for it is rising day by day, so that the kimchi we made should be the best food in the world and he went round various parts of the factory.

   While learning in detail about the production process and the technical characteristics of the equipment, the respected General Secretary went into the Kimchi Fermentation Room and asked about the process of producing kimchi.

   Being briefed by an official of the factory, who was proud to say that kimchi jars are loaded on the pushcarts and they were carried into the fermentation room, the ripening room and kimchi packaging room one after another, he looked around the site again and pointed out that the production process was wrong at once.

   The consecutive process of kimchi production is a continuous process of fermentation, ripening and packaging but the fermentation room was situated next to the spicery processing room and the ripening room which had to be next to the fermentation room was situated next to the product sample room past the packaging room.

   Even the designer, the constructor and the operator who produced the kimchi directly never thought of the irrationality of the production process as they were concerned with the feeling that the modern factory had been built to produce kimchi with its rare equipment.

   True to the teachings of the respected General Secretary, the production process was rebuilt in the factory.

   On January 11, Juche 106 (2017), the respected General Secretary visited the factory again and said that he was satisfied with the successive deployment of the fermentation room, ripening room and packaging room.

   Thanks to his far-sighted wisdom and wise leadership, the Hwasong Kimchi Factory has turned into the brilliant, standardized and absolutely perfect kimchi factory which boasts the excellent tradition of national food and makes a positive contribution to the improvement of the people’s diet.
