NICH: Noodles Garnished with Slices of Spiced Raw Fish

   As one of favourite foods of the Korean people, it is prepared by garnishing the noodles with slices of spiced raw fish.

   It is good for health as it tastes good and digests well.

   Its cooking method has evolved for a long historical period.

   The noodles are particularly favoured by the people in the coastal areas.

   For the fish to be sliced, pollack is used as its flesh is white with no small bones and does not smell unpleasant.

   Salt, soy sauce, ground red pepper, perilla, vinegar, leek and garlic are used as the materials for making the spices. They are mixed evenly, or served on a separate plate to meet an individual’s appetite. 

   The noodles are also widely used as the food for guests or family ceremonies.

   It was registered on the National Inventory of Intangible Cultural Heritage as No. 148.
