Ingredients
420g oxtail, 70g radish, 22g onion, 26g carrot, 500g broth, 4g salt, 5g hot pepper paste, 10g welsh, 5g garlic, 2g ginger, 0.5g powdered pepper, 0.3g sesame.
Preparation
Remove fur from oxtail, wash it and then cut into pieces, boil them in cold water for 2 hours, remove bones and chop them into pieces like a chestnut. Peel radish, wash it and chop it into pieces smaller than oxtail ones. Peel onion, wash it, chop it to pieces of shape like a semi-moon. Peel carrot and cut it to the decorative shape. Cut welsh into pieces 3cm long and mince garlic. Slice ginger. Add oxtail, radish, ginger into broth and boil it completely for an hour and then add carrot, welsh and onion and then boil it again for 30 minutes. Then add minced garlic, sesame, powdered pepper and serve it in bowl.
