This is a crustacean belonging to the hairy crab family. Its body is covered with shell and it has 5 legs and unlike a lobster, the whole body is in a shell and its shell is hard. Its surface is covered with the small thorns and fur of red brown color. The length of adult hairy crab is about 10cm and the width is the same as the length or a little longer.

The hairy crab lives on the seaside of the Korean east sea and it is caught much from October to next March. The chemical composition of hairy crab is as follows: 15-20% of protein, 0.6-1.5% of saccharinity, 2-3% of mineral matter.
The protein of harry crab contains more cystines than fish
s protein.
Its extract has much free amino acid-taurine.
It contains the several kinds of mineral matters which have great importance physiologically: 43mg% of Ca, 2.1mg% of Fe, 22mg of mg, 9mg% of P, and several kinds of vitamins such as B1, B2 and B6.
The ratio of Ca and P is 1:3.6. It contains much pp vitamin and so it can be used to treat and prevent vitamin pp deficiency. Since it contains much cystine and taurine, it can be used to treat the arteriosclerosis, hypertension, myocardial infraction, and liver disease. s effective to prevent the aging.
The meat of hairy crab is white, soft, and little in fat, very delrcious, high in nutritive value and absorption rate.
From the old times, our people steamed it wholly or made soup, salad, fry and so on. In the old documents

Kyuhap, Siuibang there is the following record: scrape the yellow intestines and black ones of crab separately, mix the yolk into the yellow intestines, add the soy sauce, oil, pepper, welsh, ginger to it, season it, steam it in the brass vessel and when it has been cooked to the half degree, mix a little oil into the black intestines, spread it over it evenly, steam it again to cook completely.
